First, the letter grading system is just for poultry, and most of the stuff you're going to get in restaurants unless they're really fancy is grade B or even C. Beef (if it's graded at all, grading is a voluntary process) has 8 grades--there's the good stuff, Prime, Choice and Select, and then Standard. Beneath standard, you've got Commercial, Utility, Cutter and Canner. I'd be really surprised if BK or McD used anything better than commercial, and totally unsurprised if they had some utility in there |
