American or cheddar all the way but at the Spotted Cow in Waitsfield VT I had a burger with cheese curds. Dont remember exactly which cheese it was but it was fucking amazing. |

Your burger should be excellent as a stand-alone, or else get out of the burger business. A good sharp cheddar is usually a safe bet, but once in awhile, I don't mind a nice blue cheese or gorgonzola as long as it's not completely smothered. |
